Key Lime Pie with Coconut Whip Top by Mary Hattum
Key Lime Pie (No-Bake):
2/3 cup raw walnuts
2/3 cup unsweetened, shredded Coconut
2/3 cup old-fashioned rolled oats
20 pitted Medjool dates, pitted (divided- 4 for crust, 16 for filling)
3 avocados
1-2 Tbsp. honey
3/4 fresh Key Lime juice (you can use regular limes)
1/4 cup raw cashew butter (I use Rainforest brand with coconut)
Crust Method: Grind the walnuts, coconut, and oats in a food processor ; add the 4 dates and continue processing till it holds together. Press in a 9-inch pie plate.
Filling Method: combine the 16 dates with the avocados, lime juice, honey and cashew butter in a high-powered blender of food processor and blend till smooth. Pour into crust and let refrigerate for at least 4 hours before serving. Top with coconut whipped cream when you serve.
Coconut Whipped Topping:
1 can full fat coconut milk (T&T is a good brand that separates well)
1-2 Tbsp honey, to taste
1/2 tsp Mexican vanilla extract
Method: Refrigerate coconut milk can upside down, overnight. Open can and drain coconut water. Whip with honey and vanilla till fluffy, and refrigerate till ready to use.
